Recipe: Whole-Egg Yellow Cake with Poppy Seed Cake Variation (one layer) (microwave)

WHOLE-EGG YELLOW CAKE
Makes one layer

1 cup flour
2/3 cup sugar
1 1/4 teaspoons baking powder
1/2 teaspoon salt
2 eggs
1/3 cup milk
2 teaspoons grated orange peel (optional)

Place all ingredients in mixing bowl. Blend at low speed, then beat at medium speed 2 minutes. Spread batter in 9-inch glass baking dish.

Microwave at 50 percent power 6 minutes, rotating 1/4 turn every 3 minutes.

Increase power to High. Microwave 1 to 5 minutes, or until done.

Let cake stand directly on counter top 5 to 10 minutes.

VARIATION:

POPPY SEED CAKE:
Add 2 tablespoons poppy seed to milk and mix as directed.
