HOLIDAY APRICOT BREAD
1/2 c. tightly packed dried apricots
1 lg. orange
Boiling water
1/2 c. raisins
2 tbsp. butter
1 egg
1/2 c. pecans
2 c. flour
2 tsp. baking powder
1/2 tsp. soda
1/4 tsp. salt
1 c. sugar
Soak apricots covered in boiling water for 30 minutes.
Wash orange, squeeze out juice; add boiling water to make 1 cup. Save orange rinds.
Put drained apricots, cut up orange rind (cut away white portions if thick and raisins through food grinder twice - I use food processor).
Cream butter, sugar, beat in egg. Add nuts to fruit mixture.
Sift dry ingredients. Stir into fruit mixture. Pour into greased and floured loaf pan.
Bake at 350 degrees F for 50 to 60 minutes.
