POR-QU BBQ BEANS
Source: Mike "Sarge" Davis, Whole Hog Cafe
4 cans (1 lb 12 oz each) baked beans
4 slices bacon, diced
1/4 cup chopped onion
1 Tbsp BBQ rub
3/4 cup BBQ sauce
1/4 cup brown sugar (packed)
2 tablespoons chili powder
Preheat oven to 275 degrees F.
Place baked beans in baking dish.
Fry diced bacon until done. Add chopped onion. Cook over medium heat until onion is soft. Pour off excess grease. Stir in rub, brown sugar (until liquefied). Add BBQ sauce. On low heat cook mixture an additional 10 minutes, stirring constantly. Add to beans and mix in.
Bake at 275 degrees F for 1 1/2 hours.
*Optional: Add 2 tablespoons diced red bell pepper to onion mixture as it simmers.
OUR BLEND COLESLAW
Source: Mike "Sarge" Davis, Whole Hog Cafe
2 1/2 lbs (1/8-inch) shredded coleslaw
3 Tbsp coleslaw spice
1/4 cup sugar
1/2 to 3/4 cups coleslaw dressing
Toss ingredients together, adding enough dressing to desired consistency
NOTE: It's likely their coleslaw dressing is purchased in bulk, as is their coleslaw spice. They make their own BBQ rub and BBQ sauces and offer six at their restaurant, so it's likely that is what goes in their beans and cannot be duplicated precisely.
