The Ruby Tuesday (No 's) Jumbo Lump crab cake is made from fresh, Jumbo Lump crab meat which is different from other crab meat. It comes from Blue Crab and is made with 40% breading and 60% Jumbo Lump crab meat. When it is being prepared in the kitchen the cooks are extremely cautious in the mixing process so the Jumbo Lump meat will not be broken up. It is a very tideous process but pays off in the end. The sweet chili sauce that comes with the dish is similar to a remoulade sauce but a bit spicier with a sweet flavor. Perfect combination! Also, just another little factiod... Ruby Tuesday is the #1 consumer in the WORLD of crab meat! If Ruby Tuesday was to stop selling crab meat, the crab industry would fail.
