WHOLE WHEAT SPICE COOKIES
1 cup butter (no substitutes), room temperature
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp ground allspice or ground nutmeg
1 egg white
1 1/2 cups flour
3/4 cup whole wheat flour
Beat butter in a large mixing bowl with an electric mixer on medium to high speed for 30 seconds. Add granulated sugar, brown sugar, and spices. Beat until combined, scraping down sides of bowl occasionally. Beat in egg white until combined. Beat in flour and as much of the whole wheat flour as you can with the mixer. Stir in remaining flour with a wooden spoon.
Divide dough in half; shape each half into a 7-inch long roll. Cover and chill for 4 to 48 hours or until firm.
TO BAKE COOKIES:
Cut rolls into 1/4-inch thick slices. Place slices 1-nch apart on an ungreased cookie sheet.
Bake in a 375 oven for about 8 minutes or until lightly browned. Transfer to wire racks and cool.
OPTIONAL TOPPINGS:
Drizzle with chocolate, or dip cookie in chocolate and then in nuts. Or drizzle with a sugar glaze.
