Recipe: Wisconsin Blue Cheese Walnut Wafers

1/2 cup (2 ozs.) crumbled blue cheese, at room temperature
2 tbls. butter cut in pieces, at room temperature
1/2 cup flour
1/2 cup finely chopped walnuts (or pecans)
Cream the blue cheese and butter with an electric mixer until fluffy. Mix in flour and walnuts thoroughly.
Form into a log about 1 inch in diameter and 6 inches long. Wrap in plastic wrap and chill for at least 1 hour or overnight.
WHEN READY TO BAKE:
Preheat oven to 375 degrees F.
Cut log into slices 1/8 -inch thick. Place slices 1/2-inch apart on parchment-lined baking sheet.
Bake for 12 to 14 minutes. Watch closely. Bake just until bottoms are lightly browned. Cool on wire racks. Store in airtight containers.
Makes 2 dozen small wafers
