Recipe: Plum and Nut Stottie Cakes (yeast dough using oats, applesauce and nuts)

1 cup old fashioned oats, uncooked
1/2 cup honey
1/4 cup butter OR margarine
1 tablespoon salt
1 1/2 cups water
1 cup applesauce
5 1/2 cups all-purpose flour
2 envelopes Fleischmann's RapidRise Yeast
2 teaspoons pumpkin pie spice
2 eggs
1 to 1 1/2 cups (about 5 ounces) Sunsweet plum bits
1 cup chopped walnuts, toasted (optional)
Place oats, honey, butter and salt in a large mixer bowl.
Heat 1 1/2 cups water and applesauce until boiling; add to oats mixture in the mixer bowl and stir well. Cool mixture about 5 to 10 minutes, until very warm (120 to 130 degrees F).
Add 2 cups flour, undissolved yeast, pumpkin pie spice and eggs to the cooled applesauce mixture. Beat for 30 seconds with electric mixer on low speed to combine. Increase speed to high and beat for 3 minutes.
Stir in plum bits; mix well. Add remaining 3 1/2 cups flour and walnuts to make a stiff batter. Spread batter in two greased 8 or 9-inch round cake pans. Cover; let rise in a warm, draft-free place until batter rises to top of pan, about 1 hour.
Bake in preheated 350 degree F oven for 50 to 55 minutes or until done. Remove from pans and cool on wire rack.
Makes 2 (8- or 9-inch round) loaves
