Recipe: Garlic Chickpeas and Greens

GARLIC CHICKPEAS AND GREENS

2 tablespoons extra-virgin olive oil
6 cloves garlic, crushed
1 pound mustard greens, trimmed and coarsely chopped*
Salt and freshly ground black pepper (to taste)
1 cup vegetable broth
2 cans (15 ounces each) chickpeas, drained

Preheat skillet over medium heat. Add oil and crushed garlic, saute 2 minutes.

Add greens. Turn and wilt greens in garlic oil and season with salt and pepper.

Add vegetable broth to pan and bring to a boil. Cover pan, reduce heat and simmer greens 7 to 8 minutes.

Uncover pan and stir in chickpeas, combining well with stewed greens. Adjust salt and pepper to serve.

*Other dark greens, such as collards or chard, may be substituted.

Makes 4 servings
