ISO: Anniversary Dinner

My anniversary is in less than 2 weeks and still haven't figured out what to make for dinner. It is in the middle of the week, and with a 3 yr old, we aren't going to want to go out until the weekend. What kind of special dinner can I make simply and without too many steps? I made pasta with a lobster-based sauce last year and the year before we had a rack of lamb with a mustard crust. I want to make something really special but since it is on a weekday, I won't have a lot of time to cook it. help. This is my husbands gift (can't afford to get him what he really wants and he says he doesn't want anything from me).
