Recipe(tried): Gourmet Chicken and Rice Casserole and Cornish Hens with Cherry Sauce (crock pot)
Main Dishes - Casseroles Gourmet Chicken Casserole
I got this recipe from my sister in law and everytime I make it the recipe is always requested.
2 boxes Uncle Ben's long grain and wild rice mix
3 cups cooked diced chicken
1-8 oz carton sour cream
1 can cream of chicken soup
1 stick butter
2-8 oz pkg fresh whole mushrooms
1 onion, diced
Cook rice according to package directions.
Clean mushrooms and trim stems. Quarter mushrooms. Melt butter in saucepan; saute diced onions and mushrooms until onions are translucent and mushrooms are tender.
In a large bowl, combine cooked rice, diced cooked chicken, sour cream, chicken soup, and butter-vegetable mixture. Mix thoroughly. Turn into a 2 quart oven casserole that has been buttered or sprayed with Pam.
Casserole will keep two days in refrigerator or freezes before baking very well.
Bake casserole at 350 for 45 minutes covered. Uncover and cook an additional 15 minutes. If casserole has been refrigerated or frozen and thawed it may require a few extra minutes to warm through.
Cornish Hens with Cherry Sauce
If you want something a little fancier and have a crock pot, you could try the Cornish game hen recipe. It is excellent as well. You can put the hens in the crock pot in the morning and it would be all ready after work.
2 thawed Cornish Game Hens
1 (6oz) package Stove Top cornbread stuffing
1 1/2 cups hot water
1/4 cup plus 2 T butter
3/4 cup red currant jelly
1/4 cup pitted dried red cherries, coarsely chopped
2 t fresh lemon juice
1/2 t salt
1/4 t allspice
Place rack in crock pot. In a medium bowl, combine stuffing mis with seasoning packet, water and 1/4 cup of the butter. Stuff hens and place on rack in crock pot. In a small saucepan, combine jelly, cherries, remaining 2T butter, lemon juice, salt and allspice. Cook over low heat, stirring until jelly is melted. Reserve 2/3 c sauce. Brush remaining sauce on hens in crock pot. Cover and cook on low for 6 to 8 hours. Spoon remaining sauce over hens at serving time.
