ISO: Cajun Chicken Egg Rolls

I have eaten at a restaurant in both Atlanta & Miami. Its name is Cafe Tu Tu Tango. They serve a dish which seems to be very popular, Cajun Chicken Eggrolls. If anyone could give me a heads up on how to make these it would be a big help.
