ISO: Canning leftovers?

My grandmother used to can her "leftovers". She would never, ever let anything go to waste. She had no freezer and this is how she "recycled" her leftovers. I don't know how she did it. Can you help me out here...I would like to do it myself as freezer space is limited. Thanks.
