ISO: Cheese potatoes for 200 without oven

Misc.
I'm preparing a buffet for 200+, but have limited oven space (which will be used for a chicken dish).

I want to make some kind of relatively easy scalloped or cheese potato dish (not mashed) w/o having to use the oven. I need to use canned sliced or diced potatoes, or frozen potatoes. I DO have large roaster ovens I can use.

Any good ideas?
