Recipe: Cottage Cheese Waffles (blender)
Breakfast and BrunchCOTTAGE CHEESE WAFFLES
1 cup cream-style cottage cheese, undrained
6 eggs
1/4 cup vegetable oil
1/2 teaspoon vanilla extract
1/2 cup all-purpose flour
1/4 teaspoon salt
Maple syrup
Combine cottage cheese, eggs, oil and vanilla in a blender. Cover and process until well combined. Add flour and salt; process until smooth.
Bake waffles in a preheated waffle iron according to manufacturer's instructions until golden brown. Serve with syrup.
Makes 4 (6 1/2-inch) waffles
