ISO: Chili Poblano al Carbon

I am searching for the recipe from La Fogata in San Antonio, Texas. It is a grilled poblano pepper stuffed with chicken and some kind of cheese. I tried to duplicate it at home several times but I'm missing something. Please help. Thanks
