Recipe: Zucchini Brownies (with coconut and almonds)

ZUCCHINI BROWNIES

3 cups peeled and grated zucchini
1 1/2 cups sugar
2/3 cup oil
3 tsp vanilla
3 cups flour
1/3 cup unsweetened cocoa powder
2 tsp baking soda
1/2 tsp salt
1/3 cup coconut
1/2 cup chopped almonds
Powdered sugar (for garnish)

Preheat oven at 350 degrees F. Prepare a 8x15-inch baking pan with nonstick cooking spray.

In a mixing bowl, combine zucchini, sugar, oil and vanilla.

In another mixing bowl, combine flour, cocoa, baking soda and salt. Mix wet ingredients with dry ingredients just until moistened. Stir in coconut and almonds. Spread batter in prepared pan.

Bake for 25 minutes, or until inserted toothpick comes out clean. Dust with powdered sugar when cooled.

Makes 30 brownies, each 2-inches square
