ISO: Cinnamon chip recipe request
Misc.I am looking to find a way to make cinnamon chips that can be used in pancakes. If anyone has ever had the cinnamon pancakes at Bob Evans, that will tell you what I am looking for. They are no longer making them, and so I want to be able to make my own. I don't want cinnamon just mixed throughout the dough. These have what I'd call cinnamon chips in them, that are probably about the size or slightly larger than a Chocolate chip, and seems to be a combination of cinnamon and sugar, kind of similar also to what goes on top of things like apple crumble. I know it is apparently something that can be maintained dry and in a bag, because through a discussion with a Bob Evans manager, he said that they just kept a bag of the cinnamon chips and added a certain quantity to their plain pancake mix when someone ordered the cinnamon. Does anyone know how to make something like this that I could keep on hand to throw in when I want flavored pancakes? Thanks!
