Recipe(tried): Homemade Cinnamon Chips (for pancakes)

Breakfast and Brunch
After having no luck finding a recipe on the internet for the same kind of cinnamon chips as you, having enjoyed them at Bob Evans, I did a little experimenting. While the consistency was not the same, my family enjoyed them in pancakes, and proclaimed them every bit as yummy as the ones at Bob Evans. Here is what I did:

I cut half a stick of butter into thin slices, and using a pastry blender as I would for pie crust, blended cinnamon, sugar, corn starch, confectioners sugar, and a touch of cream of tartar. I have no idea what the measured amounts were, I just played with it until it tasted right to me. Then I crumbled them into small pieces on a piece of waxed paper, and put them in the freezer for 10 minutes. After dropping pancake batter on the griddle, I placed several chips on top of each pancake and flipped them. If you are able to refine the recipe, please let me know.
