Recipe(tried): Homemade Cinnamon Chips (for pancakes) - Modified

Thanks for posting your cinnamon chip recipe! It was incentive to experiment on my own as I can't get them commercially -- or at least all natural ones :-). Here's what I did:

1 tbsp softened butter
1 cup powdered sugar (organic), sifted (or could use Splenda!)
1 tbsp cornstarch, sifted
1/4 tsp cream of tartar
1 1/2 tbsp cinnamon
about 1/2 tsp milk

Soften butter, stir in sifted dry ingredients. Add milk, blend. If too thin add more sugar. Should be very stiff but mixable. Extrude into "drops" through icing bag onto wax or parchment paper.

Allow to dry (overnight). I froze the excess and they store well.

This is basically a very stiff icing mix. I was worried the butter would keep them too soft, but they came out great and even held up in baked scones (425 degrees).
