ISO: Cucumber apple rings

cucumber recipe that use the larger cucumbers. They are sliced and put in a brine, cinnamon candies are used and red food coloring. Brine and cukes are cooked and drained each day for ?5-6 days. Recipe takes a while to do but is certainly worth it. Results in a red cucumber slice that looks and tastes like an apple ring, no kidding. Super tasting. Thank you for any recipes. KLM.
