ISO: Dean Ornish's Carrot Cake with Cream Cheese Frosting
Misc.I made the Ornish Carrot Cake with cream cheese frosting as cupcakes for a gathering I attended today. I was not able to find fat-free cream cheese so I used 8 oz of vegan cream cheese (almond-milk based). I thought the cupcakes were pretty good. I added a bit more cinnamon and vanilla, and to the frosting, more vanilla and cinnamon. I want to work on the texture a little (make it a little more muffin-like) and add flavor. I want to stay true to the Ornish diet as I'm making these cupcakes for a group coffee hour at my church and I know several are on the Ornish diet. So I want to learn to make some good muffins that they and everyone will like and appreciate. Advice? Other muffin recipes also? I would like to get better on this particular recipe. Thanks in advance!
