Recipe: Corn Relish (DelMonte, 1985)

CORN RELISH

3 cups chopped cabbage
2 red or green bell peppers, seeded and chopped
1 medium onion, chopped
1 (17 oz.) can Del Monte Whole Kernel Golden Sweet Corn, drained
1/2 cup sugar
1 Tbsp. flour
1 tsp. dry mustard
1/4 tsp. turmeric
1 cup distilled vinegar

Combine cabbage, peppers, onion and corn; set aside.

In large saucepan, mix sugar, flour, dry mustard and turmeric; gradually add vinegar. Bring to boil; add combined vegetables. Cover and simmer 5 minutes. Uncover and simmer 10 minutes, stirring occasionally. Store in refrigerator.

Serve with sandwiches or as condiment with barbecue meats and other main dishes.

Makes 4 cups
