ISO: Disabled cook needs EASY recipes

Misc.
I'm putting together a cookbook for my son who is disabled but now living on his own. He likes to cook, and uses his crockpot or microwave frequently. Reading is a challenge, so recipes need to be brief and really easy to make. Please help!! thank you very much!
