CROCKPOT PULLED PORK
This is a fast, simple method of doing pulled pork.
One boneless pork loin roast, cut into 3 or four smaller pieces
1 onion, sliced
2 or 3 tsp. of jarred chopped garlic
salt and pepper to taste
1 bottle of any type BBQ sauce
Put onions and garlic on bottom of crockpot. Put pork roast on top of that, salt and pepper roast. Pour BBQ sauce over all, and cook on low for 6-8 hours, or high for 3 or 4 hours, then finish on low for another 3 hours.
Take the pieces of pork out, put them on a large platter and using a couple of forks, pull the tender pieces of meat apart into shreds. When all shredded, put back into juice in crockpot.
Pile shredded pork into a nice hard roll or grinder roll.
This is really easy - it can be "souped" up a bit more if you like with things like chopped green pepper, or a bit of hot sauce if your son likes spicy food, or a splash of liquid smoke if you want a more authentic smokey taste.
It smells great while cooking, too.
