ISO: does anyone know at what tempature fruit syrup will be the consistancy of honey

I am trying to make fruit honey from wild pears. The recipe calls for 8 cups of juice and 4 cups of sugar and the juice of 1 lemon. It states to cook until the consistancy of honey. Does anyone know at what the tempeture is on a thermenter. Thank You
