Recipe: Golden Zucchini Muffins (with carrots and raisins)

GOLDEN ZUCCHINI MUFFINS

WET INGREDIENTS:
2/3 cup grated zucchini or yellow squash
2/3 cup grated carrots
1/2 cup margarine or butter, melted
1/3 cup raisins (golden or regular)
2 eggs, beaten
1/2 tsp vanilla
DRY INGREDIENTS:
1 1/2 cups flour
1 tsp ground coriander
1/2 tsp baking powder
1/4 tsp allspice (or pumpkin pie spice)

Preheat oven to 375 degrees F. Grease or paper-line 12 muffin pan cups.

Put wet ingredients into a bowl and mix well.

Combine the dry ingredients and add to the wet mixture; stir until just mixed. Spoon into prepared pans.

Bake for 20-25 minutes or until done.

Makes 12 muffins
