ISO: El Panchito from Los Cuco's In Houstn, TX

I lived in houston and fell in love with Los Cuco's. Specifically the menu item called El Panchito. It had seafood in a cheese sauce served on top of fried egg plant. Any help to get this would be greatly appreciated. I miss it so much.
