BROCCOLI STEAMED IN ORANGE JUICE
1 cup orange juice
1 cup water
1 teaspoon grated orange zest
1/2 teaspoon Tabasco sauce
1/2 teaspoon salt, plus more to taste
1/2 teaspoon sugar
1 head broccoli (about 1 pound), stems discarded, separated into small florets
1 tablespoon unsalted butter (optional)
Combine the orange juice, water, orange zest, Tabasco, salt and sugar in a medium-size saucepan. Place a vegetable steamer above the liquid and place the broccoli florets in the steamer. Bring to a boil, cover and steam until tender, about 5 minutes. Lift the steamer from the pot, place the broccoli in a medium-size serving bowl, and cover with aluminum foil to keep warm.
Boil the liquid, uncovered, until it is reduced and thickened, about 3 minutes. Remove from the heat, stir in the butter if desired, and season with salt.
Pour the sauce over the broccoli and serve immediately.
