Recipe: Lemon Dill New Potato Salad

LEMON DILL NEW POTATO SALAD

24 new potatoes, unpeeled
salt and ground black pepper (to taste)
2 tsp. lemon zest (or to taste)
2 tbsp. fresh dill (or 2 tsp. dried dill weed)
1 small red onion, finely chopped (or about 1/2 cup chopped mild, sweet onion)
1/2 cup sour cream
1/2 cup mayonnaise
juice of 1 lemon

Cover potatoes with cold salted water. Bring to a boil and cook until tender but firm, (about 10-15 minutes). Drain and cool thoroughly.

Quarter and season cooled potatoes with salt, pepper, lemon zest, dill and onion.

Mix sour cream, mayonnaise and lemon juice together. Stir into potatoes. Cover and refrigerate at least 3 hours. Toss again and serve.

Makes 8 servings
