ISO: Good Lunch for Friends

I have s few wonderful friend that are coming to my house to do some heavy cleaning and things I have not physically been able to do. The deal is they want me to have the day out. so, I thought I would leave something here for them to eat that was tasty. the only problem is I won't be here to stick something in the oven , so perhaps a crockpot lunch?

If you have any good ideas that are tasty and can just be served up by opening the frig., oven or crockpot please pass them on.

These people are really special to me. I am not well and very limited in what I can do physically so they pitch in! They are worth cooking something goo for them!
