Recipe: Peppermint Cake (using cake mix and crushed peppermint candies)

PEPPERMINT CAKE

FOR THE CAKE:
1 (2-layer-size) white cake mix
3/4 cup water
2 egg whites
1/3 cup vegetable oil
1/2 cup crushed peppermint candy

FOR THE TOPPING:
1 (16 ounces) can vanilla frosting
2 1/2 tablespoons crushed peppermint candy (for garnish)

Preheat oven to 350 degrees F.

In a large bowl, combine (dry) cake mix, 3/4 cup water, egg whites, and oil until smooth. Stir in 1/2 cup crushed candy. Pour batter into a greased 9 x 13-inch pan.

Bake 25 to 35 minutes, or until golden brown. Cool completely.

Spread frosting over cooked cake; sprinkle with 2 1/2 tablespoons crushed candy.

Makes 1 13x9-inch cake
