ISO: Help! French-Canadian xmas recipes

I'm hosting a dinner for 12 on New Year's Eve. I remembered that wonderful Tourtiere I had in Quebec City years ago (and thanks for the recipes I found at this site). Now I need ideas/recipes for typical French-Canadian appetizers, side dishes and dessert. Also, do you know of a very dry hard cider? Thanks a million! Cindy
