ISO: How to Freeze Pumpkin and when to harvest??

I've grown my own "pie pumpkins" this year...my family LOVE pumpkin pie!!! They have grown really well...one of my questions is: when do I harvest them...and how do I know that they are ready for harvest??? Second question: I want to freeze my pumpkin this year, last year....I bought the hole pumpkin...split it, cooked it in the oven until it was done...then scooped it out and baked my own pies...I was thinking that I could do the same process but....put the cooke pumpkin in freezer bags, does anyone know if this will work??
