Recipe: Sweetie Cornbread (using brown sugar and buttermilk)

SWEETIE CORNBREAD

1 1/4 cups yellow cornmeal
1 cup all-purpose flour
2/3 cup white granulated sugar
1 tsp. baking soda
1/2 tsp. salt
2/3 cup light brown sugar
1 egg
1 cup buttermilk
3/4 cup vegetable oil

In a large bowl, stir together cornmeal, flour, sugar, baking soda, salt and brown sugar.

In a second bowl, whisk together egg, buttermilk and oil. Add liquids to dry ingredients all at once, stirring just until blended. Spoon into a greased (9-inch) baking pan.

Bake in a preheated 425 degree F oven for 20 minutes, or until a deep golden brown.

Makes about 9 big pieces
