ISO: Italian Nougat

Italian Nougat-I have a recipe that is delicious, however the nougat has to be kept in the freezer and if not eaten quickly after removal from freezer it begins to melt. Can anyone advise me of a hardening ingredient to prevent this from happening. Assistance would be greatly appreciated
