BAKED CRACKERY COD
4 ounces Breton, Ritz or similar crackers
1 teaspoon chili powder
2 teaspoons Worcestershire sauce
3/4 cup mayonnaise
4 fresh cod fillets (5- or 6-ounces each)
Salt and white pepper to taste
Put crackers in a plastic bag and crush to fine crumbs with a rolling pin or in a food processor. Put crumbs on a plate.
Mix together the chili powder, Worcestershire sauce and mayonnaise in a large shallow bowl. Stir until everything is blended.
Lightly grease a shallow baking dish.
Season cod with salt and pepper, dip each piece in mayonnaise mixture then place on the crumbs. Without moving the fish, sprinkle crumbs plentifully over it until covered. Lift the fillets with a spatula and place in prepared baking dish.
Let stand for 20 minutes while oven preheats to 375 degrees F.
Bake fish for 15 minutes. Serve immediately.
