ISO: Jane Grigson's recipe - how to make sour cream?

Jane Grigson included in a newspaper article information on how to make sour cream. It involved mixing fresh milk with something, heating it to blood temperature and leaving it in a warm place for several hours - I don't remember what the 'something' was - and I lost the article. I spend a lot of time in France, and can't get sour cream there. Creme fraiche is a poor substitute.Can anyone help?
