ISO: jays marine grill onion popovers

I am looking for the Jay's Marine Grill in dallas, onion popovers...they were very very light, therefore they didn't have a lot of eggs and they had pieces of slivered cooked onion in them..they were not hard at all, very soft and buttery..Any help would be appreciated...I am looking for the original recipes if possible
