ISO: Make ahead meals for lunchbox oven.

MY DH is a truck driver, and heats his meals using a lunchbox oven. I like to make meals for him at home in aluminum loaf pans and freeze them. Things like chili and spaghetti work out well because he is able to stir it just a couple of times throughout warming and have it heat evenly. He's not a fan of soups and stews, but as far as ingredients goes he will eat nearly anything. I could really use some new ideas, I've been sending the poor thing the same few meals for 5 years! When he doesn't have time to heat something up (which is frequently) he usually has sandwhiches. Cold pasta salad/chicken salad/turkey salad are the only alternatives I have come up with to those so far, so help with cold meals would be wonderful too. Thanks SO much!
