ISO: Menu for artichoke meal

I love artichokes, just boiled or steamed and served with lemon butter. I am usually good at menu planning, but drawing a blank here. To me, they are great with tuna sandwiches, but I must be overlooking possibilities. I would like any hints to be for fairly light accompaniments or side dishes. I eat a lot of chokes and butter, so rich food doesn't work for me here. I also use a lot of lemon, so that has to be taken into account. Maybe pot pie or something, I don't know. Would love to hear what others like with their chokes. Thanks. Nora
