Recipe: Artichoke-Mushroom Cream Sauce for Rice or Pasta

Nora- how about...

Saute some sliced mushrooms in a little olive oil or butter

add:
1 crushed clove of garlic
1/2 cup white wine
reduce and add:
sliced (canned or bottled) artichokes (bottoms and half hearts)
1 cup cream (I use no-fat sour cream if I need to go light)
salt and pepper

Use as a topping for pasta or rice. If you need meat, top each serving with strips if cooked chicken (grilled, baked, sauteed, or leftover).
