ISO: Nacho sauce/dip

I am looking for a recipe for nacho sauce or dip that uses a white cheese (I think probably white American??) Have had this at Mexican restaurants (served as an appetizer) and very delicious. Can anyone help? Thanks in advance to anyone with any ideas on this.
