ISO: Need BIG almond, lemon or vanilla cookie

A friend is making welcome baskets for out of town wedding guests and wants to put large cookies in them. Do you know of a recipe that can be used for large, round cookies that will not lose texture or character? She is hoping for almond, lemon, or vanilla flavor. Thanks for any help!
