Recipe: Gingerbread Mansion Lemon Delight Cake (lemon loaf cake with lemon glaze)

GINGERBREAD MANSION LEMON DELIGHT CAKE

1/2 cup shortening
1 1/4 cups sugar, divided use
2 eggs slightly beaten
1 1/4 cups sifted all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk
1/2 cup finely chopped nuts
juice of 1 lemon (for the glaze)

Preheat oven to 350 degrees F. Grease and flour a 9x5-inch loaf pan.

Cream the shortening with 1 cup sugar. Mix in the eggs.

Sift together the flour, baking powder and salt. Alternately add the flour mixture and milk to the shortening mixture; stirring constantly. Mix in the nuts. Pour into prepared pan.

Bake at 350 for 1 hour. Remove from the oven. Poke holes in the top of the cake with a fork.

Combine the lemon juice and the remaining 1/4 cup of sugar. Pour over the cake.
