ISO: Old tyme johnny cake

I made johnny cake muffins recently & was somewhat disappointed,the ones I remember from my youth were moist, dense & flavourful. These although good, were light & grainy. The recipe called for cornmeal, flour, oil, baking pwd, & milk. What is missing??
