ISO: Pampered Chef Ginger and Peanut Chicken Salad

Please can someone help me find this awesome recipe that a consultant made at my home about 2 years ago, I think it was a best of summer 2005 recipe, I had the little recipe card but I lost it. I know it had ginger shavings, peanuts, chicken and some other things, I know it tasted delicious. I've searched everywhere and can not find it.
