Recipe: Circassian Chicken Pilaf

CIRCASSIAN CHICKEN PILAF

1/4 cup minced onion 2 tablespoons butter or margarine
1 cup Uncle Ben's Converted Brand Rice
2 1/2 cups chicken broth
2 teaspoons paprika
1 teaspoon salt
2 cups cooked boned chicken pieces, cut into strips 1 1/2 x 1/4-inch
1 cup chopped walnuts
1/4 cup sliced ripe olives
Dairy sour cream (optional, for serving)

Saute onion in butter in 10-inch skillet until tender, about 5 minutes.

Add rice, chicken broth, paprika, salt and chicken. Bring to boil; reduce heat. Cover tightly and simmer 20 minutes.

Remove from heat; stir in walnuts and olives. Let stand covered until all liquid is absorbed, about 5 minutes.

Serve with sour cream, if desired.

Makes 6 servings
