ISO: picnic/potluck recipes

Please Help!!! My in-laws are having a family reunion on Sunday, and I can't find a recipe to take. Most are diabetic, and since the thing is an hour and a half drive away form home, I'm very afraid of taking anything with mayo. (I happen to like my in-laws, and don't want to make them sick!) I'd like a side dish that is easy to prepare, travels well, doesn't need to be really hot or cold. We'll be out in the woods with NO facilities incl. electricity! Any thoughts? I didn't find anything in the archives that appealed to me.
