ISO: re: Arancini question

Jy, Arancini can also be frozen. Our family, from the hills of Italy call this arancini ball "suppli" We make them oval shape however. Same recipe, same technique.
We have frozen them for a couple of months at a time. I think now with the vacuum bags they might keep longer in the freezer. Make sure they are frozen on a cookie sheet before putting them i those vacuum bags however.

If anyone is reading this out there....I'd like to know if anyone has tried to BAKE these instead of frying them? Just think of the calories saved? I've made this recipe into a casserole for my college age kids....just mix it all together and bake. They love it. It's just more like NONNA's cooking if put into balls and pan fried.
