re: Make Ahead Arancini (fried rice balls)

Hi Jay,

Here are excerpts from some of the Arancini recipes previously shared here at Recipelink:


- "Roll the risotto into 1-inch balls. Roll each ball in the flour, then dip in the beaten eggs and coat with the bread crumbs. MAKE AHEAD: The risotto balls can be prepared to this point and frozen for up to 1 month; spread them on a baking sheet in a single layer and freeze until firm, then store in tightly sealed plastic bags. Let stand at room temperature for 30 minutes before frying."

- "May be made ahead and frozen. Defrost before frying."

- "Rice balls (after frying) can be refrigerated for 3-4 days, and served warm."

- "The arancini can be fried up to 1 hour ahead; let stand at room temperature. Rewarm in a 375 degree F oven."

- "(refrigerated after frying) Can be reheated in 350-degree F oven for 1/2 hour or microwaved."
